McDonalds Free New Chicken Day!
New Southern Style Chicken
Giveaway Day May 15th
(with beverage purchase)

Be prepared people on March 15th to take advantage of a free chicken sandwich from McDonald's. They are rolling out a new 'Southern Style' breaded filet - some say it will be similar to the 'Chick-A-Fil' brand.
You can get a free breakfast sandwich in the am and a free regular sandwich after breakfast up until 7 pm. There is that have to buy a beverage catch - which prolly covers their rears on the cost and maybe then some.

The Hibachi House Microwave Chicken & Rice Bowls
On a recent group shopping trip we found this unique frozen/microwavable item. Hibachi House offers a variety of styles of LARGE portions of white rice and chicken breast strips. The staff chose to sample the General Tsao's Chicken but there are 2/3others as well. Normally this sort of item would not even be considered for review as they are generally overpriced and bland. Hibachi House has broken the mold - this is true restaurant quality meal - and the portion is huge covering one dinner plate in a colossal mound. Price is fair running around 5.00 on sale and 6.50 normal.
Yes, we know there is no picture of the actual food above but staff got busy on this and then there was nothing left to photo. Will get another soon and post.

Guest Recipe From Etathed
"Simple Chicken Nacho Dip"

Simple Chicken Nacho Dip. I made this for the first time today. Thought it would go good with some of my award winning soft tacos.
1 CAN CHICKEN
1 CREAM CHEESE
1 CUP RANCH DRESSING
1 CUP HOT SAUCE
1 CUP CHEDDER CHEESE
Mix all that stuff up in a baking dish and bake at 350 until the edges brown.
Took longer than expected to bake and turned out pretty decent. And now a few observations..... I think i the one cup of franks was a bit much. 1/2-3/4 cups should do it, as it was overpowering in this mix. It is not a "hot" issue as i do not find franks "hot" it is just that the distinct franks flavor is too strong in such large quantities. Extra ranch may be another way to go.
I also think it could be improved on by substituting beef, perhaps taco meat, in place of the chicken, as the chicken seemed rather tasteless amidst the other ingredients. I believe a taco meat or chili sauce could really ad some body to this dip. So I believe there is a future to look into with this foodstuff.
If i were to grade this dip i would give it a C. However it is truly simple to make, thus i am going up it to a B-.

Whole Bird Theory:
New Interpretation
Of Chicken Meals
One of our west coast beach drifter correspondants sent us the following whole bird insights:
The pictures you see document a whole bird slow baked, stuffed with macaroni and cheese. This is a dish that goes back to my childhood, I was always a fussy eater. So I started stuffing cornish hens with mac-n-cheese. Nowadays it has evolved to a whole chicken. I use the family style mac-n-cheese with the cheese sauce pouch, as there is too much room for error when using a type that has the powder mix. Prepare the mac-n-cheese a bit al-dente, or slightly less than fully cooked.
I choose to elevate the open side of the bird, so that the juices collect in the breast portions. Preheat oven to 350 degrees. Rub the surface of the buird with olive oil, then sprinkle generously with season salt. Bake for 45 minutes with a loose foil tent over the whole thing. At 45 minutes, re-do the olive oil and season salt. Insert meat thermometer in thickest portion of breast, right to the bone. This will roast more slowly than a chicken normally prepared in the old school of thought.
